Bacon and Rotel Cups

Ingredients

  • 45 mini phyllo shells, thawed (3 packages)
  • 1 can mild Rotel, drained almost all the way
  • 1 cup bacon, cooked and crumbled
  • 1½ cups Colby jack cheese, shredded
  • 1 cup mayonnaise

Steps

  1. Preheat oven to 350°F. Place phyllo shells on a baking sheet lined with a silicone mat or parchment paper.
  2. In a large bowl, mix together the Rotel, bacon, and mayonnaise until blended.
  3. Add in the cheese and stir until completely mixed together.
  4. Fill the phyllo shells with the bacon/Rotel mixture.
  5. Bake for 30 to 35 minutes. Remove from the oven and serve warm or at room temperature.

From the margins

  • Can use tortilla chips to make gf — bake 6 min.
  • The original recipe said to bake for 15–20 minutes, so you can start checking them then. 30–35 works great and gets them nice and crispy.
