Corn, Tomato & Avocado Dip
Always a crowd-pleaser at parties.
Ingredients
- 1 can of shoepeg corn
- 3 tomatoes
- 3 avocados
- 3 tbsp finely chopped red onion
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- Salt to taste (around 2 tsp)
- ½ tbsp white pepper
Steps
- Combine all ingredients and chill for several hours before serving.
