Harris Cobbler
Another one of my mom’s staples — central to my childhood.
Ingredients
- Fruit of choice
- 1 stick margarine, melted
- 1 cup SELF-RISING flour
- 1 cup sugar
Steps

Place fruit in a 9x9 glass baking dish (if necessary, sweeten to taste).

Mix flour & sugar together. Melt butter in a separate container, then mix the butter into the dry ingredients.

Mix until it combines nicely into a single texture.

Crumble mixture on top of the fruit.

Bake at 350°F until crust is golden brown — usually about one hour.

From the margins
- Best served with a couple of scoops of ice cream!
- If you only have all-purpose flour you can add 1½ teaspoons of baking powder and ¼ teaspoon of salt for each cup of flour.
- For a 9x13 baking dish, you may need 1½ sticks of margarine, 1½ cups of sugar & 1½ cups of self-rising flour.
