Harris Cobbler

Another one of my mom’s staples — central to my childhood.

Ingredients

  • Fruit of choice
  • 1 stick margarine, melted
  • 1 cup SELF-RISING flour
  • 1 cup sugar

Steps

  1. Place fruit in a 9x9 glass baking dish (if necessary, sweeten to taste).

From the margins

  • Best served with a couple of scoops of ice cream!
  • If you only have all-purpose flour you can add 1½ teaspoons of baking powder and ¼ teaspoon of salt for each cup of flour.
  • For a 9x13 baking dish, you may need 1½ sticks of margarine, 1½ cups of sugar & 1½ cups of self-rising flour.
  • For apple: combine 8 cups apples (peeled, cored, sliced), ⅓ cup brown sugar, 1 tsp cinnamon. Add to pan and pour over ¼ cup butter. (https://www.missinthekitchen.com/easy-apple-cobbler/)
