Pasta with Pancetta and Peas

Ingredients

  • Spicy Italian sausage or pancetta
  • Pasta
  • Bacon grease or avocado oil
  • Garlic cloves (crushed and thickly chopped)
  • Peas
  • White wine
  • Butter
  • Parmesan

Steps

  1. Boil salted water.
  2. Heat up bacon grease (or avocado oil), olive oil, and a nob of butter.
  3. Add garlic and lightly heat until fragrant.
  4. Add spicy Italian sausage (or pancetta), salt, pepper, and red pepper flakes.
  5. Once sausage is mostly cooked, add white wine.
  6. When noodles are nearly ready, add them and some pasta water to the pan.
  7. Add another nob of butter.
  8. Add frozen peas.
  9. Remove from heat and add parmesan and mix.
  10. Plate, add a bit more parmesan, black pepper, and olive oil.
  11. Season to taste.
