Potato Soup

Ingredients

  • 8 slices bacon, chopped
  • 3 tbsp unsalted butter
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • ⅓ cup all-purpose flour
  • 3 lb yellow potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 1¼ tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream
  • Optional toppings: bacon, cheddar cheese, chives, sour cream

Steps

  1. Cook bacon until crispy, then remove and set aside, leaving about 2–3 tablespoons of the bacon grease in the pot.
  2. Add butter and sauté onion and garlic until soft. Whisk in flour to make a roux.
  3. Pour in chicken broth, milk, heavy cream, potatoes, and seasonings. Simmer until the potatoes are tender.
  4. Blend about half of the soup in a blender until smooth, then stir it back in.
  5. Stir in sour cream and the bacon, then top with bacon, cheese, chives, and a dollop of sour cream before serving.
