Squash Casserole
One of my mom’s additions.
Ingredients
- 12 yellow squash
- 2 small yellow onions
- 3 slices of dried bread
- 2 small eggs
- Butter, salt & pepper to taste
- 2–4 cups of cheddar
- 2 cans fried onion rings
Steps
- Fill up a steaming pot with squash. Steam it with onion for about 15 minutes w/ occasional stir.
- Toss it in the boiling water for another 5 minutes.
- Let cool & drain liquid — add butter, salt and pepper to taste.
- Add two small beaten eggs and 1.5 cups of breadcrumbs (sometimes I add some fried onion rings too).
- In a 9x9 or 9x13 baking dish, add a layer of squash and then a layer of cheese. Repeat, ending with the cheese.
- Bake at 350°F for ~30 minutes until center is hot.
- Cover with canned fried onion rings and brown for 6–10 more minutes.
